Buffalo Chicken Salad

When I asked my husband what recipes he thought should be included for
this site, one of the first he mentioned was Buffalo Chicken Salad.
We've both been fans of Buffalo Chicken wings for a long time (one of
the rewards for going on the Atkins Diet), so when he found a Buffalo
Chicken Salad on a menu he tried it. And loved it. So asked me try to
make it for him. After some trial and error, this is what he likes.
For 2 servings:
1 chicken breast, skinned, boned, and pounded thin, cut into strips
1/2 cup Krusteaz Coating Mix (or your favorite)
oil for frying
1/4 cup Frank's RedHot sauce
1/4 cup water
3 cups chopped lettuce/salad greens
1 tomato, cut into wedges
Put coating mix into a bowl; have another bowl of water (following
directions on the box of the mix). Dip chicken strips in water, then in
coating mix. Fry in medium/hot pan until golden. Place on rack in low
oven to keep warmm until all the chicken is cooked.
Combine hot sauce mix and water (the produces a somewhat milder sauce,
necessary because of the way the coating absorbs the sauce. Of course,
it's up to you and your taste buds.)
Pile greens on plate. Coat chicken with sauce and arrange over the
lettuce. Add tomato wedges around the edge.
My husband also wanted you to know that this is best with a thick ranch
dressing. I use Uncle Dan's packaged mix, mixing per the instructions
for dip, so it really is quite thick.
