The Very Best Teriyaki Marinade

I am not a fan of sweet teriyaki sauces, so I was delighted to find this recipe. The first time I made this, I used some ginger jam I have, just because I love ginger. The honey makes an equally good marinade, though. I found the miso paste at an Asian market.

This is enough to marinate 8 chicken breasts or thighs. To be healthy, take the skin off your chicken. I've also used pork to very good effect.

1/4 cup soy sauce
2 T minced fresh ginger
2 T honey
2 T miso paste (I don't think the color matters)
1 T minced garlic
2 tsp sesame oil
1/4 tsp red pepper flakes

Mix the ingredients and pour over the meat. I use a sealed baggie and just turn it in the refrigerator every half hour or so. Marinate for about 2 hours.

Bake or broil until the chicken is completely done. Serve with rice.
