I usually don’t drink coffee. However, when the holidays are round around the corner, I HAVE to have gourmet coffee. I would appreciate it if you can provide recipes for cappucinos, lattes, espressos, etc.

Also, which gourmet coffee makers and steamers are best? Mr. Coffee? Thank you.

At Starbucks, the standard number of shots for each size is: 8oz and 12 oz – 1 shot espresso. 16 oz and 20oz are 2 shots of espresso. Of course it all depends on personal preference and how strong you want your lattes etc to be.

A cappuccino is espresso shot(s), half steamed milk and half foam. A latte is espresso, plus steamed milk and a light layer of foam.

To make great steamed milk, you want the foam to be velvety smooth, like microfoam. Aerate the milk, but don’t let the steam wand come up too close to the surface, or it will create large air bubbles that aren’t unattractive.

To get the most out of espresso, you should use the shot within 10 seconds of pouring it. When the espresso is still a light brown colour; this creates a nutty, caramelly flavour. When it is black, the espresso will taste very bitter.

The latte is the base for almost every drink. From vanilla lattes, to mochas to caramel macchiatos.

The machines at Starbucks are called Mastrenas, the older ones are Verismos. It depends on the machine, but the shot time for a Mastrena is 18-23 seconds, and Verismos are faster (I have forgotten the exact time).

Simply brush the pie crust with some beaten egg white before baking. How can you tell if an egg is fresh? Immerse the egg in a small pan of cool and salted water. A fresh egg will sink.

Gourmet cooking tips on dairy:

Keep cottage cheese fresh longer by storing it upside down in the fridge. Doing this slows down oxidation. To extend the life of milk past the expiration date, add a pinch of salt per gallon. Salt effectively slows down bacterial growth.

Gourmet cooking tips on fruits and vegetables:

If you have a vegetable or fruit garden, harvest your produce in the morning to get maximum flavors. Do not throw out carrot tops, broccoli or celery stalks and onion peelings. Wash them thoroughly and add to stock for extra flavor to sauces and soups.

Pecans and Brazil Nuts are tough nuts to crack so to make shelling easier, immerse them for 10 minutes in boiling water. Alternatively, soak them in a cup of water and place this in a microwave set on high. Leave it for 5 minutes.

Corn is naturally sweet and to bring out this taste in corn on the cobs, add one tablespoon of sugar to the water when boiling. Apple is not only good to our health but it can also be good for keeping cakes fresh. Put half an apple in the same container as the cake and the cake will stay fresh longer.

Gourmet cooking tips on barbeques

When grilling meat, avoid piercing the pieces with fork but instead always use tongs for turning meat. This way, the meat will not lose its juices. When marinating, remember that white meat takes less time to marinade than red meat. Marinade chicken, fish, shrimp, and vegetables for 3 to 4 hours in the refrigerator. Ideally, you want to marinade pork and beef overnight but if you do not have time, 6 hours of marinating will work fine.

Gourmet apples would probably sell well in my area, but I don’t know where to start. I’m thinking that I should first make samples and allow people and businesses to taste my products and rate them before attempting to get licensed. And, I also need some tips on finding a commercial kitchen; I’m only 17.

I am looking for a great description of a gourmet cookie that is packed with oatmeal, has NO FLOUR, peanut butter, Ghirardelli Chocolate Chips. It is moist, sweet but not too sweet. I use raisins as the main sweetner and top it off with sugar, real vanilla and cinnamon. If you need more help in helping me you can see it at bizzylizzybakery. WHy not give one to 10 people and ask them to write you 10 words about their expereince of eating it – that will be more useful and subjective….audience / market research is how the big boys do it…so can you!
